Here is an example of one of the recipes from the book:

“The Spinach Burger”

It is absolutely delicious and is so easy to make I will post it up on here:

Spinach Burgers

  • 16 ounces frozen spinach, thawed and pressed between two plates to remove water

  • ⅔ cup finely chopped sweet onion

  • 3 cloves garlic, minced

  • 1 cup Quatro Fromaggio or fresh grated parmesan

  • ¼ to ½ cup bread crumbs

  • 2 tablespoons oatmeal pulsed to a flour

  • sea salt and pepper

  • 6 buns

  • 2 avocados, peeled and sliced

  • 2 tomatoes, sliced

  • 6 leaves green lettuce

  • condiments

  • In a large mixing bowl combine spinach, onion, garlic, cheese, ½ tsp each sea salt and pepper. Mix well, then add the ¼ cup bread crumbs and oatmeal. Stir to combine, then mix with hands. If the mixture is too moist to form patties, add more bread crumbs. Form patties using one sixth of the batch for each. Separating patties with wax paper or parchment, cover and let flavours meld, then broil for 10 minutes on each side. Serve on buns with lettuce, avocado and your favourite condiments.
